As we celebrate the holiday season, The Java House presents our newest single origin, a Colombian Chachagüí Natural. As Columbian naturals are fairly uncommon, this coffee reflects the hard work of three small-scale family farmers in Nariño, Columbia, and should be enjoyed with their process and attention to detail in mind.
Featuring pungent notes of black cherry, dried fruit, and citrus, this natural-processed Chachagüí single origin is sure to capture the attention of its consumers. The smoothness and quality of taste should be no surprise due to the mountainous terrain in the Chachagüí municipality. At an elevation of roughly 1,900 – 2,000m, this soil is ideal for the growth of top-tier Arabica coffee.
Of equal quality and importance is the methods in which these plants were harvested. Producers Ampara Maya Guerrero, Juan Francisco Ortiz Sepulveda, and Ruby Alida Paguatian Trejos collectively grew three varieties: Castillo, Caturra, and Colombia.
Cherries in this lot were hand picked by locals only at peak ripeness, and dried using a variety of methods. Amparo used a parabolic dryer for 24 days; Juan Fransisco used a mechanical dryer, that is built into the side of his house, for 5 days, and Ruby dried her batch on a patio for 15 days.
